Cheesecakes are in fact my favourite all time treat, I was hooked on cheesecakes when I was younger, which is why I struggled with my weight as a child. For many years I never went near cheesecakes as I had taken on a life of health and fitness and never ever wanted to pack on the pounds that I had worked so hard to shed.
But when I started baking low carb, I was so excited to finally get to enjoy my favourite treat again. I probably have a cheesecake every second day now, I love them so much, and lets be honest, you have to test your goods too to make sure that the standards are up to scratch ( wink wink )
So this delicious and beautiful work of art has an almond and macadamia with coconut base all around and the most creamy, tasty and delectable cheesecake centre, topped with a homemade passion fruit Puree on top.
For cheesecake lovers like myself this is a little piece of heaven.
Ingredients : Almond, macadamia, coconut, cream cheese, sour cream, eggs, xantham gum, xylitol , passion fruit.
Please note xylitol is harmful to pets, please do not feed to pets.
